The must obtained from the withered grapes is fermented and aging in small barrels oak and chestnut for 4 years. At the end of aging in the wood, the Vin Santo Occhio di Pernice is bottled and left to refine for about a year before sale. The result of a long and patient work, is a sweet, refined and prestigious passito, meditation; Produced only in Tuscany and in very small quantities.
